Our traditional food

For those who love traditionally homemade food, Ferrara offers unique specialities that can be traced back to the Estensi in 1250 and throughout the centuries have been passed from a generation to generation so that we can enjoy them today.

The city takes pride in its fresh bread “la coppia ferrarese” which is tasty and crunchy. Among the main courses made of pasta “I primi” Ferrara has a long tradition spanning from “I cappellacci di zucca” (home made ravioli filled with pumpkins, without amaretti!!), “I cappelletti in brodo” (home made ravioli with beef served in a chicken broth), to “il pasticcio di maccheroni” (maccheroni in a white bolognaise sauce, mushrooms and truffles, in shortbread crust, baked in the oven).

Amongst the main courses made of meat (“I secondi”) besides several dishes such as the stuffed turkey (“Faraona arrosto”) and boiled beef (“bollito misto”) we also find “la salama da sugo” – a salami made of pork meat which is dressed with wine and spices. “la salama da sugo” needs to be cooked slowly for many hours and it is generally served with homemade mash potatoes. Among the dishes with fish, eels are local specialties with many other fish from the Adriatic Sea.

Ferrara has also a long tradition of sweets and cakes. The most ancient one is “pampepato”, a chocolate cake with spices that can be traced back to the XV th century. We also find“la tenerina”, “il salame al cioccolato” and “la zuppa inglese”. There are many reputable wines that are mostly produced in our coastal area, such as “il Rosso del Bosco Eliceo”, “il Merlot” and “il Sauvignon”.
